Over the last few months, I have tested all of the knives in the Wusthof Classic line.
I started by rough cutting a pile of potatoes to test each knife’s ability to handle these simple everyday cutting tasks. The thin blade on the paring knife was dull and didn’t cut well at all, so it wasn’t included in the test. The rest of the knives performed similarly, though with slight differences in their ability to cut cleanly through the different types of vegetables. The chef’s knife took care of large cutting jobs like celery with ease, while the serrated edge on the kitchen shears worked best on smaller items like onions.
The steak knives were fine at their intended task, but they didn’t do anything to really stand out. They are comfortable to hold and cut easily through meat, though I did notice that the wider serrated blade on the kitchen shears worked better.
